Great drizzled on top of soups, as a base for a pasta sauce or as an addition to a dressing, basil oil is a great thing to keep in the fridge and is the perfect use for basil that is on the brink on going bad. Before storing in the refrigerator, just make sure that there is a layer of olive oil on the top of the jar so that the basil stays a vibrant green color!
2 cups basil leaves
2 cloves garlic, peeled
1 cup olive oil
Place all ingredients in a blender and blend on high until completely smooth. Store in the refrigerator until ready to use.
