Sipping on a steaming hot cup of cocoa is like being entirely enveloped in a hug. It is so warming, chocolatey and the perfect thing to have on a cool morning. I always keep raw cashews on hand, because they make it easy to whip something like this up, but if you instead have pre-prepared plant milk in your refrigerator, you can opt to use 2 cups of that warmed up instead of the hot water and raw cashews. Be careful blending the hot liquid and make sure to provide a vent for the steam!
1½ tablespoons raw cashews
1½ tablespoons cacao powder
2 dates, pitted
2 cups hot water
Dash of vanilla extract (optional)
Place all ingredients in a blender and blend for 1-2 minutes until completely smooth.
